Champagne is having a moment. No longer reserved for once-a-year toasts or big celebrations, it’s quietly becoming part of how we socialise—enjoyed by the glass, midweek, as a way to make the everyday feel a little more considered. A small luxury, in a time when many of us are craving just that.
Opening at the end of April, Cuvée is Glasgow’s newest bar—and a response to the cultural shift in how we drink. A Parisian-inspired Champagne, wine and cheese bar from Merchant Pubs and Bars, it’s tucked upstairs at 1 Lynedoch Street in the city’s West End, just next door to cocktail bar Rascal, inside one of the area’s grand old townhouses.
The space is intimate but refined. There’s room for 30 guests, including a curved, marble-topped bar with 16 stools that wrap around it—encouraging solo sips, spontaneous plans and unhurried evenings. The interiors blend vintage landscape murals, antique mirrors, and a soft neutral palette lifted by pale pinks and mossy greens. There are nods to Art Deco and Parisian design, but nothing is overdone.
At its heart is a carefully curated wine list, created in partnership with luxury house LVMH. Champagne is served by the glass and bottle, with pours including Pol Roger Reserve Brut (£17.50), Moët & Chandon Brut Imperial NV (£15), Veuve Clicquot Yellow Label (£16), and Ruinart Blanc de Blancs (£23.50). For those celebrating (or just feeling bold), Dom Pérignon Vintage 2013 is available by the bottle.

Sparkling wines are well represented too, with Lorentz Crémant d’Alsace available at £7.50 per glass and Cloudy Bay Pelorus Brut NV and Rosé NV by the bottle. A non-alcoholic option from Italian brand Sea Change features notes of elderflower, mint and apple—proof that alcohol-free doesn’t have to mean dull.
Food at Cuvée is designed for grazing. The menu includes charcuterie, parfait and terrines served with Freedom Bakery sourdough and oatcakes, cheeses sourced from George Mewes, and small plates like salt cod croquettas with aioli, or smoked salmon beetroot salad with vodka and horseradish crème fraîche. A chocolate ganache with Champagne sorbet closes the menu with something sweet and subtle.
“There’s been a real gap in the market for a bar like Cuvée,” says Courtney Flynn, who heads up sales and communications for Merchant Pubs and Bars. “We’ve experienced a growing interest in Champagnes and sparkling wines by the glass across our other venues.”
Cuvée will be open from Wednesday to Sunday, operating a walk-in-only policy for now. The space will also be available for private hire, accommodating up to 50 guests—ideal for receptions, birthdays or launches with a little added fizz.
Whether it’s a low-key date, a Thursday night that needs elevating, or a reason to stay out just one more hour, Cuvée brings a new kind of Champagne culture to the city—elegant, sociable and quietly indulgent.
