If you’ve walked down Hamilton Place in Edinburgh lately, you’ll have seen the queues. Rain or shine, the line outside Lannan starts early and stretches far. Some arrive before the shutters go up, hoping to get their hands on a fig danish or whatever sells out first that day. Many don’t make it in time.
Since opening in summer 2023, Lannan has become a kind of cult bakery. Part of the appeal is the menu – refined, seasonal, quietly inventive. But it’s also the way the space feels: thoughtful, local, and led by someone who genuinely cares about the craft. That someone is Darcie Maher, who is now preparing to open a second space just next door: Lannan Pantry.
Opening this autumn, the Pantry will be a neighbourhood shop and events space – stocking the same produce used in the bakery, with a strong focus on seasonality, sustainability and simplicity.

What is Lannan Pantry?
Set to open on Hamilton Place with its own entrance, the Pantry will act as both a retail store and support space for the bakery. It’s where ingredients will be stored, prepared, and shared with customers in a new way – allowing Lannan to adopt a truly zero-waste approach.
You’ll be able to shop for:
- Fresh fruit and vegetables
- Free-range eggs and cultured butter from The Edinburgh Butter Company
- Dips, sauces, bread and pasta made by the Lannan kitchen team
- Cheese and charcuterie sliced to order, housed in a traditional French cheese fridge
Meat will be sourced from George Bowers and Bowhouse, while produce will also come from Natoora – a supplier known for working directly with growers to prioritise flavour over shelf life. This is Natoora’s first-ever retail partnership in Scotland, and one that’s likely to draw plenty of attention.
There will also be an expanded kitchen space, with Lannan now producing its own sausages, bacon, pork pies and pâté en croûte. A curated wine cellar will hold natural and biodynamic bottles, plus craft cider and beer. For the home, you’ll find Lannan-branded linen aprons, cotton totes and handmade ceramics by Claire Henry – made exclusively for the space.

So, who is Darcie Maher?
Originally from the Scottish Borders, Darcie started working in kitchens at 15, quickly realising she had a sharp instinct for flavour. After six years as a chef, she pivoted fully to pastry, honing her skills at top bakeries and restaurants across the UK. She later ran a consultancy business, working with bakers across Europe and growing a loyal audience on Instagram through her account @darciebakes.
In 2023, she opened Lannan – a tiny bakery with a big impact. It was named Pastry Opening of the Year 2024 by La Liste and featured in multiple UK food roundups. She was also listed on CODE’s 30 Under 30, named one of CODE Hospitality’s Women of the Year (2025), and included in The Sunday Times Young Power List.
But it’s the public response that’s really told the story. Lannan is a word-of-mouth success, with queues forming every morning, and pastries often selling out within hours. The bakery’s style – both visually and in flavour – taps into something Gen Z and millennial food lovers want more of: care, quiet skill, and a break from fast, impersonal food culture.

A space to gather, as well as shop
Lannan Pantry has been designed by Rodi and Cécile Studios. Inspired by Darcie’s travels in France, the interiors will feature reclaimed tiles, bespoke joinery, and a central farmhouse table displaying fresh produce. The space will also host workshops, chef demos and small events.
While you won’t be able to buy pastries here directly, the Pantry will be the new collection point for online pre-orders. A smart move, given how quickly Lannan sells out most days. Orders will open weekly via lannanbakery.com, giving customers a chance to plan ahead.
Lannan Pantry opens this autumn at 29–35 Hamilton Place, Edinburgh EH3 5BA. It will run Tuesday to Sunday, 9am–4pm.
