The Palmerston has something special lined up. On October 6th, they’re hosting a one-off lunch with Sarah Johnson, the talented pastry chef and author of the new cookbook, Fruitful. This event celebrates her cookbook release with a menu that brings her fruit-focused recipes to life.

Pear Fizz Cocktail with warm olives and salted almonds

Crab Cakes with fennel and herb salad

Braised Pork Shoulder with cider, caramelised apples, and celeriac salad

Sarah’s cookbook, Fruitful, released in April, is quickly becoming the go-to guide for cooking with fruit. It’s packed with over 80 recipes, from sweet treats to savoury dishes, along with tips on roasting, poaching, and puréeing. With chapters on everything from citrus and berries to orchard and vine fruits, it’s full of creative ideas, whether you’re making Polenta and Blackberry Muffins or Pan-Fried Duck Breast with Blackcurrant. Plus, it includes flavour charts and advice from fruit growers worldwide.

Sarah trained under Alice Waters at Chez Panisse in California and now splits her time between Spring restaurant in London and Heckfield Place in Hampshire, focusing on pastry development. Her strong connections with farmers and producers shine through in her recipes, making Fruitful not just a cookbook, but a celebration of fruit in all its forms.
